White Bean and Spinach Soup with Turkey Sausage

White Bean and Spinach Soup with our Purnell's Turkey Sausage. This recipe is even better served in a bread bowl! It's Gooo-od!


Heat the oil in a pan and add the onion. Saute onion until it is tender, about 5 minutes. Mix in garlic and red pepper flakes and continue to saute for additional minute.
Pour in chicken stock and begin to warm. Stir in oregano, beans and sausage. Bring to a boil and then reduce heat to a simmer. Simmer for 20-25 minutes.
Add the spinach to soup, mixing well. Once spinach wilts, remove from heat and serve.

*We use cannellini beans and topped it with chopped tomatoes


  • 1 lb Purnell’s Turkey Sausage, cooked and crumbled
  • 1 can (16oz) white beans, drained and rinsed*
  • 1 onion, chopped
  • 1 tsp minced garlic
  • 4 cups chicken stock
  • 1 tsp oregano
  • 1 bunch spinach, loosely chopped
  • 2 Tbs olive oil, divided
  • salt and pepper to taste
  • 1 dash red pepper flakes
