Waffle Tacos

These waffle tacos are breakfast you can hold in your hand. With eggs and our Original Country Sausage (Medium), it's Gooo-od!


In a large bowl, add all dry ingredients for the waffles. In a separate bowl, add all wet ingredients and mix well. Combine the dry and wet and stir until the batter is fully mixed. Set aside.

In a skillet on medium-high heat, cook the sausages until golden brown. In a separate skillet, cook the eggs to your preference. We recommend scrambled or over easy.

At the same time (hope you can multi-task!) cook the waffles using a waffle iron until lightly golden brown.

Place the sausage and egg on top of the waffle and top with cheese and salt/pepper. Fold the waffle in half and eat like a taco!



  • 2 eggs
  • 2 cups all-purpose flour
  • 1 3/4 cups milk
  • 1/2 cup vegetable oil
  • 2 tbs sugar
  • 4 tsp baking powder
  • 1/4 tsp salt
  • 1 tbs vanilla


  • 1 package Purnell’s “Old Folks” Sausage Patties
  • 6 eggs
  • 1 1/2 cups shredded cheddar cheese
  • Salt/pepper to taste
