6 Purnell’s Turkey Sausage Patties
1 box pasta
4 oz smoked Mozzarella cheese
2 cans whole peeled tomatoes (28 oz)
2 tbsp olive oil
1 yellow onion
1 clove garlic, minced
Pinch red pepper flakes
Salt and pepper
1/2 cup parmesan cheese
In a large skillet on medium, begin by heating the olive oil. Chop the onions into large pieces and mince the garlic. Add the onions to the skillet and cook until softened, later adding the garlic and cooking for an additional minute.
Continue by adding the tomatoes into the mix, tearing them into smaller pieces as you go (include excess juice from the can for added flavor).
Slice the sausage into pieces and add with a sprinkle of red pepper flakes. Cover and cook on medium high for about 20 minutes, until the sauce is thickened and the sausage is golden brown.
Boil a pot of water and cook the pasta, following package instructions, while the sauce is still cooking. Then combine both the pasta and sauce in a large serving bowl.
Slice the mozzarella into cubes or balls and stir into the hot mixture, allowing the cheese to become soft and warm.
Top it off with a sprinkle of Parmesan cheese and salt and pepper to taste. Sit back, relax and enjoy!
