Tostados with Refried Beans


Cut sausage into 1/4 inch slices. Fry without added fat. When meat starts to brown, add chopped onion and cook until onion is wilted. Blend in tomato sauce. Spread tostados with hot beans. Then spread the onion and sausage mixture over the beans and cover with grated cheese. Add lettuce and garnish with avocado wedges and radishes. Makes 12 servings.


  • 1 lb. Purnell’s “Old Folks” Chorizo
  • 1 medium onion, chopped
  • 12 tostados
  • 2 cups refried beans
  • 2 cups tomato sauce
  • 3 tsp parmesan cheese grated
  • Shredded lettuce
  • Avocado wedges
  • Radishes
