Sausage Sweet Potatoes with Pecans
Our Original Country Sausage (Medium) patties, sweet potatoes, butter, pecans, brown sugar and ground cinnamon. "It's Gooo-od!"
Preheat oven to 350 degrees.
Heat a large skillet over medium heat and add sausage patties. Cook until heated throroughly (no longer pink) and browned on outside.
Drain and set aside. Once cooled, tear into smaller pieces.
Wash sweet potatoes then pierce skin with a fork. Place on a baking sheet and bake for 1 hour, until softened.
Remove from oven and set aside to cool.
Once cooled, cut sweet potatoes into 2 inch cubes. Place in 3 quart casserole dish and mix in all ingredients.
Cover and bake for 30-40 minutes,until top in bubbling.

- 3 lbs sweet potatoes
- 3 Tbs butter
- 3/4 cup pecans, chopped
- 1/2 cup brown sugar, packed loosely
- 1 tsp ground cinnamon
