Sausage Stuffed Zucchini Pizza

This recipe calls for our Purnell's "Old Folks" Italian Sausage, white onion, bacon, sour cream, butter, salt, curry powder, Roma tomato, thyme, Parmesan cheese and black pepper cooked in zucchini boats.


Preheat oven to 375 degrees. Begin by washing all vegetables. Slice the zucchini in half lengthwise. Then scoop out the middle with a melon baller (or spoon) and set aside. Leave a ledge of zucchini around the edges, to serve as the pizza ‘crust.’ Arrange the zucchini boats in a pre-greased baking dish. Chop the remaining zucchini insides into small pieces.

Then finely dice half of the onion and chop the already cooked bacon. Place in a large mixing bowl. Add curry powder, remaining zucchini insides, sour cream, diced tomato, butter and finely chopped (preferably) fresh thyme. Mix together and then fill zucchini boats.

Top with parmesan cheese on top and fresh cracked black pepper. Bake uncovered for 30 minutes, or until desired tenderness. Enjoy!


  • 3 zucchinis
  • 1/2 roll Purnell’s “Old Folks” Italian Sausage
  • 1/2 white onion
  • 6 slices cooked bacon
  • 2 tbs sour cream
  • 2 tbs butter
  • 1/4 tsp salt
  • 1/8 tsp curry powder
  • 1 roma tomato, seeded and chopped
  • 1 tsp thyme (fresh preferred)
  • Parmesan cheese
  • black pepper
