Sausage and Vegetable Strata
Try this strata with our Original Country Sausage (Medium), eggs, cream, mushrooms, bread and kale. "It's Gooo-od!"
In a large mixing bowl, combine eggs, cream, and seasonings. Set aside.
Add olive oil to a large skillet and heat over medium-high heat. Add sausage and cook thoroughly until browned, crumbling. Add mushrooms and cook until softened.
Remove from heat and add to a new large mixing bowl.
Add additional oil to the skillet and re-heat. Toss in kale. Cook for 2-4 minutes, until slightly wilting. Remove from heat and set aside.
Preheat oven to 350 degrees.
In a large oil-coated baking dish, layer half of the bread, then vegetables, and finally cheese. Repeat with the remaining half. Pour egg mixture over the top and
allow to sink through. Cover with plastic wrap and allow to rest in the fridge for at least 30 minutes, overnight if possible.
When ready to bake, remove plastic wrap and cover with foil. Bake in the oven for 35-40 minutes. Remove foil and return to oven. Bake until the top is golden brown.
- 2 lbs Original Country Sausage (Medium)
- 12 large eggs
- 2 1/2 cups cream
- 1 1/2 cups mushrooms, chopped
- 4 tbsps fresh oregano, minced
- 1 loaf bread, cubed (baguettes work great!)
- 1 bunch kale, rinsed and chopped into smaller pieces
- olive oil, for skillet and baking dish
- 1 tsp garlic, minced
- 1 onion, diced
- 1 tsp salt
- pepper, liberally sprinkled
