Mexican Eggs


Directions

Ingredients

1/2 pound Purnell’s “Old Folks” Chorizo Sausage, removed from casing
1/2 cup salsa
6 eggs
1 can refried beans
Salt and freshly ground pepper

Directions

In a medium saucepot or saucepan on medium-high heat, cook the sausage. While cooking the sausage, break it up with a wooden spoon. Once the sausage is thoroughly cooked, add the salsa. Warm beans in a small saucepan. Cook the sausage and salsa mixture for 2 minutes.

Crack all the eggs in a side bowl to catch any egg shells. Beat the eggs with a fork and add to the saucepot/saucepan. Stir the mixture until the eggs are incorporated and continue to cook for 3 to 4 minutes. Once the eggs are completely cooked, season with salt and pepper and serve hot over re-fried beans.
