Cindy’s Lasagna
Made with Purnell's Italian Sausage




Directions
Cook lasagna noodles in boiling water for 20 minutes. Drain, rinse and set aside.
Step 1
Brown sausage and garlic slowly; pour off excess grease and add basil, salt, oregano, tomatoes and tomato paste. Simmer 20 minutes, uncovered. Add small amount of water if necessary
Step 2
In a bowl, mix cottage cheese, romano cheese, parsley flakes, eggs, salt and pepper.
Step 3
In a 13 x 9 x 2 1/2 inch baking dish, place 1/2 the lasagna noodles, then spread 1/2 the cheese filling on the noodles, spread 1/2 the mozzarella cheese on cheese filling, then spread meat sauce. Repeat layers and bake 30 minutes at 375ºF.

- 1 lb. Purnell’s “Old Folks” Italian Sausage or substitute with Hot or Medium Country Sausage
- 10 oz. lasagna noodles
- 2 cups tomatoes, crushed
- 2 cloves garlic, minced
- 3 cups cottage cheese
- 1/2 cup grated Romano cheese
- 2 tbsp parsley chopped
- 2 eggs, well beaten
- 3 cups cottage cheese
- 1 1/2 tsp oregano
- 1 tbsp basil leaves
- 1/2 tsp salt, divided
- 1/2 tsp black pepper
- 1 lb. mozzarella cheese, grated or sliced thin
- 12oz can of tomato paste
