Casserole with Sausage, Potato and Spinach


Try this casserole with our Original Country Sausage (Medium), spinach, potatoes, onion, garlic, minced and heavy cream. "It's Gooo-od!"

Directions

Preheat oven to 400°F. Coat a medium baking dish with non-stick spray.

Place potatoes n a large pot and cover with water. Bring to a boil. Redeuce heat to a simmer and cook until tender, about 12-15 minutes.

In a large skillet over medium-high heat, heat vegetable oil. Add spinach and cook until beginning to wilt, stirring frequently. Remove from heat and set aside.

Add the sausage to the skillet and cook and brown, cooking thoroughly. Remove sausage and set aside.

Add onions to skillet and cook until softened, about 5 minutes. Stir in garlic and cook until fragrant. Mix mixture into bowl with sausage.

Remove potatoes from pot. In a large mixing bowl, mash potatoes with, cream, butter and spices. Stir in spinach and 1/2 cup of Swiss cheese.

Spread potatoes in bottom of baking dish. Top with the sausage mixture and sprinkle with remaining shredded Swiss cheese. Bake for 20-25 minutes. Cool before serving.

  • 1 pound Original Country Sausage (Medium)
  • 8 oz fresh spinach, cleaned and chopped
  • 3 medium-sized potatoes, peeled and cut into 1-inch chuncks
  • 1 white onion, peeled and sliced
  • 1 Tbsp garlic, minced
  • 1/3 cup heavy cream
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 cup of shredded Swiss cheese, divided in half
  • 1 1/2 Tbsp butter
  • Olive oil or vegetable oil
