Breakfast Empanadas
This recipe uses our Purnell's Hot Country Sausage,cream cheese, tomatoes with HOT green chilies, jumbo biscuits, and an egg. "It's Gooo-od!"
Directions
Preheat oven to 350 degrees. Coat a baking sheet with non-stick spray.
In a large skillet, over medium-high heat, brown sausage, cooking thoroughly. Drain.
Add chunked cream cheese and stir until melted. Mix in tomatoes and spices. Combine well.
Separate each biscuit into 2 halves and press out with hands to make larger. Spoon a heaping tablespoon of sausage mixture into center of each. Fold biscuit over and seal by pressing edges together. Place on baking sheet and lightly brush with beaten egg. Bake 12-15 minutes.

- 1 pound hot pork sausage
- 1 package cream cheese, chunked
- 1 can diced tomatoes with HOT green chilies
- 1 can jumbo refrigerated biscuits
- 1 egg, lightly beaten
- 1 tsp cumin
- 3/4 tsp salt
- 1/8 tsp black pepper
- 1/8 tsp garlic powder
- 1/8 tsp onion powder
- 1 teaspoon chili powder
