Blue Ribbon Corn Bread


Jiffy corn muffin mix, eggs, milk, whole corn, onion, cheddar cheese, serrano peppers and our Purnell's "Old Folks" Hot Country Sausage baked in a skillet. It's Gooo-od!

Directions

Mix wet ingredients except for sausage and cheese. Add dry ingredients and cheese. Brown, drain and mix Purnell’s sausage in last, only stir enough so there are some quarter-sized chunks of sausage. Bake in a greased pan at 400 degrees for 35 minutes, or until knife inserted in middle comes out clean. Cool in pan, cut in squares, then refrigerate. Great in the morning with a couple over-easy eggs on top! Too Hot? Try different peppers or omit peppers altogether…

  • 2 large eggs
  • 3/4 cup milk
  • 1 cup whole corn
  • 1/2 chopped onion
  • 8 oz shredded cheddar cheese
  • half dozen chopped serrano peppers
  • 1 lb Purnell’s “Old Folks” Hot Country Sausage
