Chorizo with White Beans
Directions
Ingredients
1 lb Purnell’s chorizo, cooked and crumbled
1 20oz can of white beans (Cannellini work great!)
1 yellow onion, diced
2 tsp garlic, minced
1 red bell pepper, seeded and chopped
1 cup chicken or vegetable broth
Salt + Pepper, to taste
1 Tbs olive oil
Directions
Heat medium pot over medium heat. Add olive oil and allow to warm. Toss in onion and garlic and cook for five minutes, stirring frequently to coat.
Add in bell pepper and continue to cook for 3 minutes, until bell pepper has softened, Stir in the beans and broth.
Reduce heat to low. Simmer for 45 minutes.
* We love this recipe served with a crunchy loaf of bread. Tomatoes are also a great addition!
