Sausage-Onion Turkey Stuffing

Made with Purnell's “Old Folks” Hot Pork Sausage

Ingredients:

  • 1 lb. Purnell’s "Old Folks" Hot Sausage
  • 2 cups celery, chopped
  • 4 tbsp butter
  • 2 tsp. grated orange rind
  • 1/2 tsp lemon pepper
  • 1/4 cup chopped parsley
  • 1/4 cup currants
  • 1 medium yellow onion, minced
  • 8 cups stale bread crumbs
  • 2 tsp salt
  • 1 tsp thyme, marjoram, sage
  • 1/4 cup orange juice

How to prepare:

Sauté celery and onion in butter. Soak currants in orange juice. Fry and drain sausage. Combine all ingredients and stuff a 12 or 14 lb. Turkey.
