Ingredients:
- 1 lb. Purnell’s "Old Folks" Medium or Hot sausage
- 2 unbaked pie shells
- 3 unbeaten eggs
- 1/8 tsp nutmeg
- 1/4 lb. grated swiss cheese
- 2 cups of Half and Half
- Dash of cayenne pepper
How to prepare:
Fry-scramble sausage until done and drain thoroughly. Put 1/2 each in pie shells. Combine remainder of ingredients and pour over the sausage. Bake at 400ºF for 35 minutes. Makes 2 quiches, serves 8. These freeze well, and may be baked frozen, allowing additional cooking time.
