Blue Ribbon Corn Bread

Made with Purnell's “Old Folks” Hot Pork Sausage

Ingredients

2 boxes Jiffy corn muffin mix
2 large eggs
3/4 cup milk
1 cup whole corn
1/2 chopped onion
8 oz shredded cheddar cheese
half dozen chopped serrano peppers
1 lb Purnell’s “Old Folks” Hot Sausage

Directions

Mix wet ingredients except sausage and cheese. Add dry ingredients and cheese. Brown, drain and mix Purnell’s sausage in last, only stir enough so there are some quarter sized chunks of sausage. Bake in a greased pan at 400 degrees for 35 minutes, or until knife inserted in middle comes out clean. Cool in pan, cut in squares, then refrigerate. Great in the morning with a couple over easy eggs on top! Too Hot? Try different peppers or omit peppers altogether…
